I have admired Shosui Takedas knives for many years. The Takeda Smithy was founded in 1920 and moved to Niimi in 1951. They produce hand-forged blades and tools such as kitchen knives, hunting knives, hoes, hatchets, etc. A third generation master blacksmith, Shosui Takeda specializes in hand forging blades from the highest quality carbon steel, New Aogami Super Steel (NAS), which is Stainless Clad for easier maintenance and has added Vanadium. The blades are marked with “NAS” and Takeda’s Signature, all forged entirely by hand, as it has been done for generations. Each blade holds its edge extraordinarily well and resharpens easily.

The Gyuto is the Japanese answer to an all purpose Western Chefs knife. This is a traditional Gyuto in that is has a Japanese Octagon handle and a Kuro-Uchi finish. A full blade that will amaze you with its ease at Slicing, Chopping, Rocking and Dicing.
Master Takeda hand forged the Aogami Super Steel blade which is approx 9 ” long (21 cm), and is over 2 3/4″ Wide! This beautiful blade has a clear full length Hamon that indicates expert precision Heat Treatment by Master Takeda.
The size of this big knife challenged my light box, please excuse the off center pics.
Takeda passes his blades to another Master who completed the traditional Japanese handling process. This is the way that Japanese Swords and knives have been made for centuries. The Natural Hard wood handle is custom contoured in an Octagon pattern.
The Nakago (or Tang) is sealed with a Natural Waterproof Resin.
Takeda’s Signature is hand stamped into every blade along with the NAS for his New Aogami Super Steel designation.
The Hamon is clearly visible and the blade is hand sharpened on increasing grits of natural Japanese Waterstones by Takeda to an amazing laser sharp edge.
This knife comes complete in a Presentation Box with the Name of the
Maker and the knife indicated on the front.
This knife will appeal to anyone who values true hand made tools with a rich history.
An incredible value for a Hand Forged Blade of this size and quality. Forge Scale and Handle Grain may vary slightly from picture.
