Traditional Japanese Kitchen Cutlery

One of the joys of owning knives is experiencing new kinds of cutlery from around the world.  Most chefs will agree that the Japanese make the best Chef’s knives and some examples can cost in the hundreds or thousands of dollars.


Each Ohishi Hammer Finished blade is Hand Forged using a San-Mai technique – Hard VG-10 Stainless Steel forms the cutting edge and is sandwiched between 15 layer damascus walls.  This technique provides incredible Performance with the Reduced Maintenance that most appreciate. 

This model is a Gyuto ~ the Japanese version of a French Chef knife.  Typically Thinner and Longer than a Santoku, the term Gyuto translates as “Beef Knife” ~ but it is purpose built for all manner of Slicing, Dicing and Mincing  Fruits, Vegetables or Meat.  More elegant than a standard chef’s knife, it is very easy to maneuver.  Many cooks find the Gyuto the only knife needed for easy food preparation and top performance.

The hammer-finished, damascus blades of these Ohishi knives are designed for the chef who needs a high-performing tool and appreciates a thing of beauty.  The ambidextrous blade is formed from a central layer of VG10 super-steel, surrounded by 15 layers of softer stainless damascus. The VG10 stainless steel is hardened to Hrc 60-61 ensuring that the blade will take and hold an extremely sharp edge.

The unique tsuchime, or hammer finish, enhances both the look and performance of the knife. Each of the hammer blows produce an effect similar to that of a granton edge – allowing the knife to move more cleanly and efficiently through the food and assisting the food to fall away from the side of the knife rather than sticking.

A mahogany-toned pakkawood handle completes the piece. Pakkawood provides strength and stability along with moisture resistance — a valuable set of virtues in both home and commercial kitchens.

The Gyuto knife is enjoyed for most all cutting jobs in the Kitchen and will slice easily through even the toughest vegetable skin or meat and will be a joy to use.
