Once in a great while I have time to walk around a Knife Show to see what catches my eye. Even more rare is when I find myself drawn back to a New Makers Table a second or third time. Yet that is exactly what happened at the recent NYCKS I attended.
I introduced myself to Michael Zieba and we began discussing his work. As he described his extensive artistic background and his knife making techniques, I took the time to examine his knives VERY closely. Upon inspection it was easy to see the passion and fine detailed dedication that he put into each of his creations ~ whether it was High End Custom Chef’s knives, exquisite Hand Carved Knife Display Boxes or Hard Use Cutting Tools for Emergency Personnel. I understood Michael’s philosophy, recognized his talent and felt compelled to share his unique creations with my customers.

All of Michael’s knives are crafted one at a time in his shop. Michael recently received a Distinctive Award ~ based in Brooklyn New York, Michael was selected from keen competition by the Brooklyn Chamber of Commerce as the sole Knife Making Recipient of the “BROOKLYN MADE ~ GOLD” Award

This is a remarkable Custom Chef’s knife with a definite European Flare but made Entirely in the US. This knife would serve the Cook for any type of Cutting or Slicing on all types of Meat, Fresh Vegetables or General Kitchen Prep.
This knife has every conveivable Custom upgrade that Michael offers. The blade is 52100 Carbon Steel with a protective, Abstract Custom Patina and an approximate Rc of 61. Michael even gave this blade an 24k Gold filling in his Maker’s Mark etch.
The blade thickness starts at slightly more than 1/8″ and Michael expertly Hand Grinds the entire blade to have a Full Height Flat Grind for maximum cutting efficiency. This leaves the Polished Edge Razor Sharp and makes slicing effortless! A Distal Taper allows for extremely fine cutting ability when necessary.
Never one to take shortcuts, Michael started on the handle with a Single piece of Black G-10 which he Milled out to accept the Custom Contoured Thunderstorm Kevlar overlays! Ergonomically shaped to provide an extremely comfortable grip.
The blade measures 1 1/2″ Wide at the Heel and is extremely well balanced. Many Professional Chef’s insist on Carbon Steel for their Blades. 52100 is a Tough, High Carbon Steel that will hold an edge extremely well and gives world class performance.
Michael also hand crafted a Gorgeous Custom Brazilian Rosewood Traditional Saya (pronounced “Sigh” Ya” – meaning – Wooden scabbard) to perfectly match the blade!
The blade is held in with a Brass Pin, when the pin is removed the knife easily slides from its protective sheath.
This knife comes complete in a Padded Zipper Case.
