I have admired Shosui Takedas knives for many years.  The Takeda Smithy was founded in 1920 and moved to Niimi in 1951. They produce hand-forged blades and tools such as kitchen knives, hunting knives, hoes, hatchets, etc. A third generation master blacksmith, Shosui Takeda specializes in hand forging blades from the highest quality carbon steel, Aogami Super Steel (AS), which has added Vanadium. The blades are marked with “AS” and Takeda’s Signature, all forged entirely by hand, as it has been done for generations. Each blade holds its edge extraordinarily well and resharpens easily.

If you have wandered around a knife Show in the last decade you probably have seen Shosui at his table, Sharpening his knives using this same Double Sided Water Stone Paddle sharpener.

Shosui developed this unique method of sharpening to be both portable and safe. The Waterstone Grits are Fine on one side and Course on the other and are each approx 1″ Thick.  The Natural wood extended paddle is there as a safety to protect your wrist ~ to help prevent an accident if the stone slides too far off the blade in the forward direction. 

 Shosui includes step by step instructions with each Double Sided Paddle Sharpener.
