Once in a great while I have time to walk around a Knife Show to see what catches my eye.  Even more rare is when I find myself drawn back to a New Makers Table a second or third time. Yet that is exactly what happened at the recent NYCKS I attended.  

I introduced myself to Michael Zieba and we began discussing his work.  As he described his extensive artistic background and his knife making techniques, I took the time to examine his knives VERY closely.  Upon inspection it was easy to see the passion and fine detailed dedication that he put into each of his creations ~ whether it was High End Custom Chef’s knives, exquisite Hand Carved Knife Display Boxes or Hard Use Cutting Tools for Emergency Personnel.  I understood Michael’s philosophy, recognized his talent and felt compelled to share his unique creations with my customers.

  All of Michael’s knives are crafted one at a time in his shop.  Michael recently received a Distinctive Award ~ based in Brooklyn New York,  Michael was selected from keen competition by the Brooklyn Chamber of Commerce as the sole Knife Making Recipient of the “BROOKLYN MADE ~ GOLD” Award

This is a Custom Chef’s knife with a definite European Flare but made Entirely in the US.  This knife is guaranteed to slice like a Light Saber!  It would serve the Cook for fine Cutting or Slicing on all types of Fresh Meat or Fresh Vegetables during General Kitchen Prep.  

This Custom knife has a Rare Blade of San Mai Steel with a 52100 Core Forged between two layers of 410 Stainless for the exterior.  52100 is a very High Carbon Steel and when given a Cryogenic Quench and an approximate Rc of 61 makes an Incredible cutter.

The blade thickness starts at 1/8″ + and Michael expertly Grinds the entire blade to have a Full Height Flat Grind for maximum cutting efficiency. This leaves the edge Razor Sharp and makes slicing effortless! 

A Fine Distal Taper allows for fine cutting ability when necessary. Also, note the Layers in the San Mai Steel. 

The blade measures 1  1/2″ Wide at the Heel and has a Beautiful Custom Patina.  52100 is universally known as a Tough, Easy to Sharpen Steel that takes a Razor Sharp edge.    

This is a Full Tang Chef’s Knife ~ the handle scales were cut from a single block of Tasmanian Black Wood.    

The handle is generous in length, slide your hand forward for Finer Cutting or move back a bit for longer slicing.  You could use this knife for hours with no hand fatigue. 

 This knife comes with a FREE Custom Made Key Chain.  Every kitchen could use more Bacon, so Michael used the Lost Wax method to create this Bronze Hand Cast example from an actual piece of Bacon. A $75 value
